Cuban Chicken: A Yummy Supportive Meal.
We get tired of simply eating chicken. The key to making sure you don’t get tired of common staples is to explore other styles of food to find exciting new flavors. Your taste buds will thank you! This meal is a Cuban dish we at casa Dexter, simply called “Cuban Chicken”. Here are the ingredients:
- boneless chicken breasts
- black or red beans (2 cans)
- onions, thinly sliced
- Cajun spice (low sodium)
- chili powder
- cumin
- onion powder
- fresh garlic
- cayenne pepper
- olive oil
In a separate pan, add olive oil. ”Sweat” the onions by cooking on a low heat, covering the pan so that the steam helps to cook them. You want to the onions to soften, but not to caramelize.
Trim the fat off of the chicken breasts, and then butterfly each piece. Tenderize the chicken using either the back of a chef knife or a mallet. Slightly season the chicken with Cajun spice. Using olive oil, cook the chicken in a pan over high heat, flipping half-way through. The chicken should have a nice lightly golden brown color.
Open the cans of beans. You can rinse them or leave the starch. If you rinse them, you want to replace that with water. Put the beans in a pot and heat over low to low medium heat. Add chili powder, cumin, onion powder, and a clove or fresh garlic to taste. (There’s a million ways to add spice, make it taster good to you!). Stir and let the beans cook until the liquid is slightly reduced (the beans will thicken slightly).

Once everything is done, serve the onions on top of the chicken and the beans on the side. Enjoy!
